Rum & California 
Raisin Brownies


200g California raisins
3/4 cup Dark rum
200g Plain flour
125g Caster sugar
125g Soft light brown sugar
175g Butter
50g Cocoa powder
1/2 tsp Baking powder
1 Large egg icing sugar for decoration

How it’s Done

Set Oven to 160°C/Gas 3/325°F – Oven temperatures  may vary.

1 Add together, rum and California raisins in a microwavable bowl. Heat in the microwave on high heat for 1 minute. Remove and stir. Return to the microwave and heat on high for further 1 minute. Stir and set aside until needed.
2 Line the 9″ tin with the baking parchment making sure it comes up the sides of the tin.
3 Place butter into microwavable container and microwave until completely melted.
4 Place all the dry ingredients into a bowl and mix well to combine. Add egg and mix to combine.
5 Now add California raisins, all the liquid and mix together. Add the melted butter and mix well until combined.
Pour mixture into 9” baking tin and level.
6 Cook in the middle of the oven for 20-25 minutes (depending in oven, ovens may vary). You are not looking
for the mixture to be set firm when you take it out of the oven, but still slightly gooey in the middle.Let cool completely (if you can wait that long) and sprinkle with
icing sugar to serve.
