California Peach, raisin and Blue Cheese Salad

GRIDDLED PEACHES, CALIFORNIA RAISINS AND BLUE CHEESE

Serves 4
Preparation time: 15 minutes  Cooking time: 2 minutes

 

Ingredients
75g California Raisins
2 California Peaches
150g bag mixed salad leaves
25g walnut pieces, roughly chopped
75g blue cheese eg  Roquefort

Dressing:
2 tbsp extra virgin olive oil
2 tsp red wine vinegar
freshly ground black pepper

 

Method

  1. Whisk the dressing ingredients together in a medium bowl, then add the raisins, stir together and set aside.
  2. Halve the peaches, remove the stones and then cut each half into six slices. Heat a non-stick griddle pan until very hot. Add the peach slices and cook for 1 minute on each side or until lightly charred, remove and set aside.
  3. Divide the salad leaves between four plates, tuck the peaches in amongst the leaves then scatter over the walnuts and crumbled cheese.
  4. Spoon over the raisins and the dressing and serve.

Tip: Other cheese can be used in this recipe such as a crumbly Cheshire or White Stilton.
