You will needScones- 250g plain flour
- 2 tbsp caster sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon
- Pinch of salt
- 75g butter
- 1 small green eating apple, grated with skin
- 150g California Golden Raisins
- 150ml buttermilk
Glaze- 75g icing sugar, sifted
- 2 tsp butter, melted
- 1-2 tbsp milk or water
- ¼ tsp vanilla extract

Method- Pre-heat oven to 200°C/400°F/Gas 6. Lightly grease a baking sheet. Set aside.
- In a mixing bowl, combine flour, sugar, baking powder, cinnamon and salt. Add the butter and cut into small pieces then rub together with your fingertips until the mixture is crumbly.
- Add the grated apple and raisins, and just enough buttermilk, to combine the mixture into a soft dough. Turn dough out onto a lightly floured work surface and lightly knead together. The dough may
- become a bit sticky from the juicy apples, do not worry.
- Divide into 8 pieces and form each into a ball, place on the baking sheet and pat down to make a scone about 1.5cm thick. Bake for about 12-14 minutes or until golden brown.
- While scones are baking prepare the glaze. Combine all ingredients with enough milk or water until consistency is thin enough to use a pastry brush to apply it to the scones.
- Remove from the oven and place scones on a wire rack set over a tray to catch drips from glaze.
- Generously brush the glaze over the tops and sides of the scones while still warm. Allow the glaze to set before serving.
