NEW RECIPE! White Chocolate Mousse with California Raisins (Serves 8)

You will need

  • 50g California Raisins
  • 20ml orange juice
  • 250g white chocolate broken into pieces
  • 1 egg white
  • 250ml double cream
  • 1 tbsp chopped pistachio nuts

Method

  • In a small bowl, combine raisins and orange juice and set aside.
  • Place the chocolate in a heat proof bowl over a saucepan of simmering water until it has melted, then remove from the heat.
  • In a separate bowl whisk the egg white and the double cream till it peaks softly.
  • Put a large spoonful of cream into the bowl of melted chocolate and mix. Now gently fold this chocolate mixture into the bowl of cream till it is evenly mixed.
  • Divide the mousse between 8 dessert dishes and chill for at least an hour. Spoon the soaked raisins equally
