California Raisin Cheesecake (Serves 4)

You will need

  • 75g digestive biscuits, crumbed
  • 50g butter or margarine, melted
  • 2 x 250g cream cheese, softened
  • 2 tbsp sugar
  • 2 tbsp lemon juice
  • 142ml sour cream
  • 50g California Raisins
  • 150g assorted fresh fruit pieces

Method

  • In small bowl mix crumbs and butter. Press 3 tablespoons of crumbs onto bottom and partway up sides of a stemmed glass such as a wineglass. Repeat with 3 more glasses. Set aside.
  • In bowl beat cream cheese with electric mixer until fluffy. Beat in sugar, lemon juice and sour cream. Stir in raisins. Spoon 20g of cream mixture and fruit into each glass.
  • Layer each glass with an additional 2 tablespoons of crumbs and, then, 20g of cream cheese mixture and fruit. Sprinkle any remaining mixture on top.
  • Chill 1 to 2 hours.
