You will need- 100g California Raisins
- 4 tbsp rum
- 4 eggs (separated)
- 100g icing sugar
- 500ml double cream

Method- Soak California Raisins in rum for about 30 minutes.
- Whisk egg yolks and sugar until thick and fluffy.
- Beat cream until stiff.
- Fold beaten cream into egg mixture.
- Add rum-soaked California Raisins.
- Whisk egg whites until stiff and fold into mixture.
- Pour into polythene container.
- Freeze for 1 hour, then stir to redistribute California Raisins.
- Seal container and freeze.
- Before use, leave in fridge for approximately 30 minutes to soften before spooning into dishes.
- Serve with a sprig of mint and fruit.
