Rum and California Raisin Ice Cream (Serves 4)

You will need

  • 100g California Raisins
  • 4 tbsp rum
  • 4 eggs (separated)
  • 100g icing sugar
  • 500ml double cream

Method

  • Soak California Raisins in rum for about 30 minutes.
  • Whisk egg yolks and sugar until thick and fluffy.
  • Beat cream until stiff.
  • Fold beaten cream into egg mixture.
  • Add rum-soaked California Raisins.
  • Whisk egg whites until stiff and fold into mixture.
  • Pour into polythene container.
  • Freeze for 1 hour, then stir to redistribute California Raisins.
  • Seal container and freeze.
  • Before use, leave in fridge for approximately 30 minutes to soften before spooning into dishes.
  • Serve with a sprig of mint and fruit.
