Carrot and California Golden Raisin Bread (Makes 10 Slices)

You will need

  • 150g plain flour, sifted
  • 75g golden caster sugar
  • 1 tsp baking powder
  • ¼ tsp bicarbonate of soda
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • ¼ tsp ground allspice
  • 1 large egg, beaten
  • 125ml water
  • 2 tbsp vegetable oil
  • ½ tsp vanilla extract
  • 175g carrots, peeled and finely grated
  • 50g pecans, chopped
  • 150g California Golden Raisins

Method

  • Pre-heat oven to 180°C/350°F/Gas 4. Grease and line a 900g (2lb) loaf tin with greaseproof paper.
  • Combine dry ingredients in a large mixing bowl. Make a well in centre of dry mixture.
  • In a separate bowl, mix together remaining ingredients, add mixture all at once to dry ingredients. Stir just enough to moisten and evenly distribute carrot.
  • Turn into prepared tin. Bake for 50 minutes or until a cocktail stick inserted in the centre comes out clean.
  • Cool for 5 minutes, then remove the loaf and transfer to wire rack to cool completely before slicing.
