You will need- 150g plain flour, sifted
- 75g golden caster sugar
- 1 tsp baking powder
- ¼ tsp bicarbonate of soda
- ½ tsp salt
- 1½ tsp ground cinnamon
- ¼ tsp ground allspice
- 1 large egg, beaten
- 125ml water
- 2 tbsp vegetable oil
- ½ tsp vanilla extract
- 175g carrots, peeled and finely grated
- 50g pecans, chopped
- 150g California Golden Raisins

Method- Pre-heat oven to 180°C/350°F/Gas 4. Grease and line a 900g (2lb) loaf tin with greaseproof paper.
- Combine dry ingredients in a large mixing bowl. Make a well in centre of dry mixture.
- In a separate bowl, mix together remaining ingredients, add mixture all at once to dry ingredients. Stir just enough to moisten and evenly distribute carrot.
- Turn into prepared tin. Bake for 50 minutes or until a cocktail stick inserted in the centre comes out clean.
- Cool for 5 minutes, then remove the loaf and transfer to wire rack to cool completely before slicing.
