Raisin and Chocolate Pudding (Serves 4)

You will need

  • 75g butter
  • Brioche loaf
  • 50g chocolate drops
  • 50g California Raisins
  • 150ml milk
  • 50g sugar
  • 3 eggs
  • 2 tbsp raspberry jam
  • Chocolate spread
  • Grated rind and juice of 1 orange
  • Double cream to serve

Method

  • Pre-heat oven to 180°C/350°F/Gas 4.
  • Grease a large shallow ovenproof dish with some of the butter. Cut the brioche in half and butter it with the remainder.
  • Place the buttered half of the brioche in the bottom of the dish and spread with chocolate spread.
  • Sprinkle with the rind and half the raisins.
  • Place the remaining brioche half on top and cover with the rest of the raisins and chocolate drops.
  • Mix the milk, cream, sugar and juice in a jug and pour over the brioche and leave to soak for 30 minutes.
  • Place the dish into a roasting tin, which has been filled halfway up with boiling water and baked in the oven for 30-40 minutes.
  • Warm the jam then spread over the baked dish and serve with fresh double cream.
