California Raisin Souffle (Makes 6 individual soufflés or 1 x 20cm dish)

You will need

  • 250g California Raisins
  • 150ml grape juice
  • Orange rind, granted
  • 4 egg whites
  • 50g soft brown sugar

Method

  • Place the raisins into a bowl with the grape juice and orange zest. Cover and refrigerate overnight.
  • Preheat the oven 180°C/350°F/Gas 4. Place 6 oiled individual dishes on a baking sheet.
  • Place egg whites in clean bowl and whisk, add the sugar and whisk further until stiff. Gently fold in the raisins until well blended.
  • Divide the mixture between the dishes and bake for 15-20 minutes until browned and well risen.
  • Serve immediately with reduced fat Greek yogurt.
